Cheese, Ham & Green Bean Egg White Omelette

Yum! This was just a throw together of ingredients tonight but it turned out to taste really good! I hope you all love it as much as I did! It’s low-fat, low-carb, low-sugar but high in protein and flavour! 🙂

Egg Mixture:
-3/4 cup egg whites(1/2 cup if you don’t eat as much a I do haha)
-pinch of mustard powder
-dash of dijon mustard
-salt/pepper to taste(I like quite a bit..)
-2-3 tbsp shredded low-fat or fat-free cheddar cheese
-1 tbsp green onion
-handful of steamed or canned green beans, chopped in bite size pieces(cook until soft ahead of time)
-1 tsp of parmesan cheese
-2 tbsp shredded low-sodium black-forest ham (or regular chopped ham, or even turkey or chicken!)

Directions: Heat a frying pan coated with cooking spray on medium-low heat. Whisk together all ingredients in the egg mixture and pour them in the pan. When partially cooked but still soft, add the green onion, beans & ham, sprinkle with parmesan and then sprinkle cheddar cheese on one half of the omelette. Keep frying the egg until almost fully cooked, then fold in half over the cheese and cook for a few more minutes or until desired. Once finished, take off the heat and serve with a little low-sugar ketchup or a tsp of dijon mustard!
