Well this recipe is a classic, I love eating these and will most often eat the whole batch by myself..They are just that good haha Good thing they are good for you too!
I had attempted sweet potato fries before finally figuring out the perfect way to get them crispy but still a bit soft in the centre! Mine are slightly less fry like and more potato wedge like but that just goes to show you my amazing cutting skills. Feel free to make yours a little prettier looking!
-1 large sweet potato
-cooking oil spray or olive oil
-Salt & Pepper
*Note* I am not using specific amounts because basically it’s all up to what you feel like! Read on and you’ll see what I mean!
Directions: Peel the sweet potato and cut it into wedges or sticks slightly thicker then your average french fry(Refer to the picture) You don’t want them too thin because they will shrivel up in the oven! Thick is better! Then place the slices in a bowl of iced water for about 20-30minutes. What this does is removes some of the starch from the potatoes so they become crispier in the oven without burning as easily! Preheat You oven to 425 degrees Fahrenheit. Next take the sweet potatoes out from the bowl and pat dry with paper towel as much as possible then place on a cooking oil sprayed cookie sheet and spray the tops of the fries with cooking oil or add a little olive oil and toss until evenly coated. Now top with the salt(I like quite a bit of salt on these!), pepper, lots of paprika(to your liking! again I like big flavour so I add quite a bit) & cayenne pepper(this adds the spice! So go easy if you don’t want them too spicy, you can always add more afterwards!). Toss the potatoes once more in the excess seasoning and then place in the oven for 20-30 minutes flipping part way through. They will be done when they begin to crisp up and turn slightly brown on the edges. Serve with a side of vinegar and ketchup!
