The BEST Low-Carb Protein Pancakes EVER

Best Low-Carb Pancakes
Okay I know this is a little dramatic but lately I have tried so many protein pancake attempts and overall they were all good but none were REALLY good until I made these! They are the perfect blend of ingredients!

*Makes 1 large serving of 3-4 pancakes

Here it is!
Ingredients:
3.5 tbsp cottage cheese
1/4 cup egg whites
1/4 tsp vanilla
1 tbsp almond milk
1/2-1 tsp splenda(my protein powder is already pretty sweet so I don’t need much)
1 tsp cinnamon
1 scoop good quality vanilla protein powder(I use creamy vanilla PVL)
1/2 tsp baking powder
pinch of salt

Topping:
-1/2-1 tsp coconut oil
-1/2 cup mashed berries(thaw in microwave and mash with fork) mixed with 1 tsp splenda or other sweetener
(I used 1 large strawberry + some raspberries & blueberries)
-sugar-free syrup

Directions: Heat a pan over low-medium heat. Spray with Pam(you may need to re-spray for each pancake). Combine all dry ingredients in a bowl. In a food processor, combine all wet ingredients and pulse until smooth. Stir wet ingredients into dry.(Don’t over mix). Use a ladle to pour batter onto hot pan to form pancake shapes. Flip after 1-2 minutes on each side. (Look for browning or bubbles coming through.) Repeat until batter is gone, placing each finished pancake onto a plate inside your oven(heated to lowest temp. then turned off) to stay warm. Serve all the pancakes warm. Dip a knife in coconut oil and lightly spread over each pancake. Top with sugar-free syrup & hot fruit mixture. Enjoy! 🙂

Nutrition Facts(entire recipe): 12g carbs, 7.5g sugar(from cottage cheese/fruit!), 3-5g fat(depending on the amount of coconut oil & protein powder), 38g protein(depends on protein powder!)

  1. These are terrible! I followed the recipe step by step and even ran to the grocery store on a rainy day to get exact ingredients and they turned out horrible, the mix doesnt even cook well enough to turn the pancake over!! what a mess 😦

    • Oh no!! I am so sorry! I have no idea why they didn’t work 😦 I am not sure what protein powder you used but that definitely has a large impact on the results. I used to eat these everyday and had no problems with them falling apart! I always cooked them slow (maybe a slighty lower temperature) as protein pancakes sometimes require a bit of extra time to cook properly. Again, I am so sorry ! Some of my other pancake recipes may be better if you give them a shot although they may not be as low-carb! Thank you for the feedback!

  2. I tried these today and they worked very well! And were very tasty – cooked longer and lower and no problems!
