Peanut Butter & Jelly Yogurt

So..my ultimate weakness when it comes to eating healthy would have to be peanut butter and jelly sandwiches. They are okay, but in moderation! This is why I decided to create a lower-carb, lower-fat version that I could eat everyday and still have that awesome taste! As well as a great amount of protein to help keep you full! So if you are a PB & J lover, this one’s for you.

Ingredients:
-3/4-1 cup 0% fat-free plain greek yogurt *divided into two separate bowls
-1/2-3/4 tbsp splenda (to taste, add more if you like it sweeter)
-1/2 tsp vanilla + 1/4 tsp
-1 & 1/2-2 capfuls or raspberry Torani sugar-free syrup (OR raspberry crystal light to taste) *Note: you could remove the raspberry entirely and just have an all-vanilla yogurt
Toppings:
-1/2 tbsp peanut butter
-1/2 tbsp sugar-free jam (I used rhubarb-strawberry jam, yum!)
-1/2 tbsp chopped peanuts
-10 raspberries or 2 strawberries chopped
-1/4 cup 100% whole wheat shredded cereal, partially crushed (or you could use another 100% whole wheat cereal)
-Sugar-free Syrup (Optional but highly recommended!)
Directions:
In one bowl of greek yogurt, combine it with 1/2 tsp vanilla and enough splenda to your desired amount of sweetness. In the other bowl, combine the yogurt with your Torani syrup or raspberry flavouring to taste along with a 1/4 tsp of vanilla and a tiny sprinkle of splenda. Now pour your raspberry yogurt on top of your vanilla and smooth the surface. Top with 1/2 tbsp peanut butter(soften in microwave), 1/2 tbsp jam, peanuts, raspberries and whole wheat cereal. Drizzle with sugar-free syrup & sprinkle with an extra dash of splenda. Grab a spoon and dig in! Happy breakfast eating :D!
