Nutritious, Delicious Dinners!

So these are really great because I get veggies but still get great flavour. No bland food for me 🙂

The first picture is a cauliflower stir-fry with sesame oil,ginger & garlic with almonds, celery, cauliflower and bean sprouts(almost reminds me of pasta!), red pepper flakes & green onion. Sauce consists of soya sauce, chicken broth, a pinch of cornstarch & about 1/2 tsp splenda sweetener. I had this with a side of sliced turkey breast.

The second picture is slice of  toasted rye bread with some delicious pizza toppings including a little prego pasta sauce, tomato slices, green olives/peppers, turkey pepperoni and low-fat mozzarella cheese all melted under the broil until golden brown and gooey yum! On the side I have a small salad with a few chopped almonds, a little olive oil, apple cider vinegar and balsamic. Such a great dinner!

  1. This looks delicious, and I’d love to make it. Can you post the exact measurements, or at least for the sauce? Not sure how much soy sauce, broth, etc. to use. Thank you!

    • Sure! It actually isn’t much of an exact science for me, i just estimate the measurements 🙂 But when I first made it I think i did about 1/2 tbsp soya sauce, 3 tbsp chicken broth, 1/2 tsp splenda(more if you like it sweeter) & like I said about a pinch(1/8 tsp cornstarch, 1/4 tsp if you want a thicker sauce). The ginger is about 1/4 tsp & 1 large clove of garlic. If you follow my other stir-fry recipe “Tasty Traditional Stirfry” it will help alot with the amounts & directions since it’s pretty similar. 🙂

      For the stir-fry again I just throw in the amount of veggies/nuts/red pepper flakes I feel like haha. It makes about 1 large spaghetti bowl serving for this amount of sauce. Sometimes I toss in rice as well with chicken and it still works! Also I cooked this in about 1tsp sesame oil and added a little water at a time if the pan got dry. I highly recommend cooking with this because it gives the vegetables an amazing taste. or try coconut oil and curry powder!
