Okay..so I may have lied, this isn’t exactly white hot chocolate but it tastes pretty darn close, and don’t judge right away! This may become your new favourite late night treat. Want to know the secret ingredient?
Regular thai coconut milk! Yup that’s correct, this is a delicious coconutty drink but believe me, the coconut does not overwhelm this drink since it is also made partially with almond milk.
1/4 cup thai regular coconut milk (mine comes in a can and has 5g fat for 4 tbsp, you can also sub full fat coconut milk if you’d like!)
2/3 cup unsweetened vanilla almond milk (or you can sub with more coconut milk or do what I do and use 1/2 cup almond, 1/4 cup coconut and 1/4 cup water)
1-2 drops to stevia(or more to taste)
1/2 tsp sugar-free syrup/pure maple syrup or honey
1-2 drops peppermint extract
optional: 1 heaping tbsp cocoa powder and additional stevia for a chocolate version!
Directions: In a microwaveable mug combine the coconut milk, almond milk and water if using and heat for about 3min on high. After heating, add in stevia, honey and peppermint extract to your liking. Enjoy! *(For Chocolate version, heat the milks in a cup and in a separate mug add your cocoa powder and pour the milk into that cup once it’s hot so it mixes better).
