Cinnamon Butterscotch Protein Fruit Dip (Dairy-Free)

Hey all! I have something sweet and delicious to share with you…it felt about time I made a new recipe so without further ado, I introduce you to Cinnamon Butterscotch Protein Fruit Dip. This is definitely perfect for anyone with a sweet tooth. It’s a great way to get kids to eat more fruit! Cool, creamy and refreshing for any hot day. The best part? You can eat this dip and feel good knowing there is no added sugar! Although it sure tastes like there is.

Serving size: 4 tbsp

Ingredients:
-1 scoop good tasting vanilla protein powder(I use designer whey french vanilla which is perfect)

-1 frozen medium ripe banana (110g)

-1 tbsp Cinnamon Raisin Swirl Butter by PB & Co. (*Note: if this isn’t available near you then you can try subbing with 1 tbsp natural peanut butter and a sprinkle of cinnamon)

-1/2-3/4 tsp sugar-free, fat-free butterscotch pudding mix

-1/8 tsp vanilla extract

-2 tbsp unsweetened vanilla almond milk

-4-5 ice cubes

-enough water to blend( don’t overdo it! just enough to blend!) *You could use  vanilla almond milk for all of the liquid, I just chose not to because I didn’t want the almond taste take over in this recipe*

-1/4 tsp xanthan gum (optional but helps a lot with pudding consistency!)

-1/4 tsp sweetener(optional, it’s already quite sweet on it’s own!) But I used truvia as my sweetener and I gotta say, it’s a new favourite!

Directions: blend together until smooth and pour into a bowl. Eat as is or refrigerate for 20 mins or so to let it set up a bit more. Enjoy! Serve with a side of fresh fruit such as apples, pears, peaches or strawberries.

*NOTE* If you REALLY like this dip, you can actually just eat it on it’s own, it’s so healthy! So if you choose to eat this for breakfast, the entire nutrition facts are listed below as well.

Quest Bar Review-White Chocolate Raspberry

Hey all! So if you’ve seen my other flavour reviews, you probably already know that I am a huge fan of Quest and their products. They have the best nutrition profile of any bars and all of their products taste amazing and deliver quality protein and fibre. Their customer service is also amazing and overall they are just a great company. So I’ve tried pretty much every flavour of their protein bar line including the Quest Craving PB Cups (which by the way are awesome!) but I had yet to try their new flavour White Chocolate Raspberry. While at my local nutrition store yesterday I noticed they just got them in and excitedly I bought 3 bars to try( I was sure I would like them!) And man was I right!! This bar is so delicious! I felt like I was eating dessert for breakfast. I love the new soft texture to all their bars. The white chocolate chunks and raspberry were throughout the entire bar. No fake raspberry taste here! It tasted almost like raspberry cheesecake or a raspberry muffin when heated up. I love how the sweetness from the white chocolate compliments the tanginess from the berries. When I finished the bar I had to restrain myself from eating another one! They are that good! & It’s hard to believe but this flavour almost tops my past favourite, Chocolate Chip Cookie Dough or at least ties. Seriously if I could I would go buy a full box of just this flavour alone. I highly recommend you try it out and heat it up for about 15 sec. in the microwave for best results! That way all the white chocolate melts and makes it even more amazing :).

Healthy Chocolate Zucchini Muffins

I found a ton of huge zucchini in my garden today that were just perfect for baking so I couldn’t help myself…Even though this isn’t my own recipe, I had to share! IThese muffins turned out beautifully and I actually enjoyed them way more than I thought I would! Don’t be turned off by the zucchini, you can’t taste it at all and it makes the muffins so rich and moist!  I felt so guilty eating these to the point where I had to remind myself they were actually good for you. They are high protein, low-fat, deliciously decadent and every chocolate lover’s dream. I hope you like them as much as I do!

Serves 12:

Ingredients:

  • 2-1/2 cups old-fashioned oats
  • 2 eggs
  • 3/4 cup non-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/3 cup sugar
  • 2 Tablespoons honey
  • 1 extra ripe banana (120g)
  • 2 cups shredded zucchini (about 1 medium-sized zucchini)
  • 1/2 cup unsweetened cocoa powder
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon( I left this out but feel free to add it!)
  • 1/2 teaspoon salt
  •  2 tbsp mini chocolate chips for topping(I used enjoy life chocolate chips, 30g)

Directions:

  • Preheat oven to 350 degrees.
  • Lightly grease a 12-cup muffin tin with olive oil spray.
  • Using a food processor, grind oats until fine. They should have the consistency of flour.
  • Add all other ingredients (except chocolate chips), and pulse until the batter has a smooth consistency. (Add a few ingredients at a time if your food processor has trouble mixing a lot at once.)
  • Stir in additional chocolate chips if desired.
  • Distribute batter evenly in the muffin tin.
  • Sprinkle the tops with a little extra sugar or sweetener that measures like sugar and the chocolate chips.
  • Bake 15-20 minutes, or until the tops gently bounce back when touched and a toothpick comes out of center of a muffin clean.
  • Allow to cool for 10-15 minutes. Then run a knife around the edges of each muffin to remove from tray.

****My Changes***:

I added maybe a tad less than 1/4 cup splenda to the batter as I felt it needed a little extra sweetness. I also ground the oats and zucchini separate in the food processor since mine is very small and I just added them to a bowl with the other wet ingredients and stirred. Then combined the dry ingredients in another small bowl and added them in afterwards.

*Note* My oats are very prevalent in the final result because I have probably the worst food processor on the planet haha, so I’m sure your muffins will look much prettier than mine!

Simple Lemon Garlic Tilapia

This recipe is easy to prepare, high in protein and very low in fat. It’s perfect with a side of your favourite vegetable and rice. I really enjoyed this as a quick lunch and I will definitely be making it on multiple occasions!

Serves  1:

Ingredients:

  • 1 tilapia filet
  • 1 tsp olive oil
  • 1-2 tsp fresh lemon juice (or as much as you’d like)
  • 1 small clove of garlic crushed
  • salt/pepper
  • Fresh Parsley(could sub dried if you don’t have any but fresh makes it taste amazing!)

Directions:
Preheat your oven to 375*. Grab a small baking tray(optional) and a piece of tinfoil. Place your filet on the tinfoil and using a brush or your fingers, spread olive oil over both sides of the filet. Next, squeeze your lemon juice over the filet and season both sides with salt & pepper. Lastly sprinkle fresh parsley over top and wrap up the filet in the tinfoil. Place in the oven for 12-15min. (Until the fish is white and flaky). Serve!

Nutrition Facts per filet: 140 calories, 0g carbs, 5g fat, 20g protein

Finger foods for lunch! I had some crackers with cream cheese and bruschetta, a slice of black forest ham along with shrimp and cocktail sauce. Yum!

I had some amazing treats today. I went out to the new froyo place called “Chill” where they use all organic/natural ingredients (they use greek yogurt). Their yogurt was different then the typical places, it was thicker and more creamy, the toppings there were outrageous with everything from skor bits to full brownies and real cheesecake! The staff was also awesome and let us choose any free drink. I tried this zero calorie flavoured/carbonated water which was really good! I also got super lucky and found out Popeyes was selling the new white chocolate raspberry quest bars so I picked up a few that I can’t wait to try along with some other favourites of mine. I also bought PB2 which I have been dying to try!

For dinner I had 2 easy over eggs with rye bread & chicken bacon(along with some carrots not pictured above). This bacon is by far closest to the real thing as you can get without all the extra calories. It got super crispy, just how I like it!

What I ate Today!

Hey guys, sorry I have been gone for a while but again it’s summer and it’s hard to keep up the blog when I’m on vacation! If you didn’t already see, I have posted multiple pictures of the delicious ice cream and other desserts I ate while at my cottage. They were all amazing and it was fine to eat them in moderation since I was getting more exercise at the cottage then I do normally at home. I kept up my workouts as well as biked & went for long walk/runs on the beach almost everyday. I love it there but now that I’m home I’ve bumped up the intensity of my workouts as well as the amount of food I am consuming. I’m ready to go all in again! Care to join me?

A snack of Chocolate Chai Tea, red pepper, carrots, 2 kinds of spicy hummus along with additional chili pepper flakes(can never have too much spice!) & scrambled egg whites with dill & other spices. I ended up only eating half of the hummus!

Lunch was a banana with 3oz. of lemon dijon chicken. This is actually one of my favourite lunches though I typically eat an apple instead of a banana but my Dad stole the last one this morning…

I also tried this new s’mores Luna bar. I also just tried the chocolate nut brownie one as well but I definitely prefer this one! Reminds me a lot of a typical granola bar but much healthier and with 9g of protein, it keeps you feeling fuller longer!

For dinner I had this amazing lasagna my Mom makes on occasion, it’s made with cottage cheese(don’t be turned off by this..it’s what makes it awesome), low-fat mozzarella, parmesan & extra-lean ground beef. It’s honestly the best lasagna you will ever taste, haha not being biased or anything. I also ate these perfect cucumber slices as a side with my dinner. They were straight from my garden and tasted amazing! (I didn’t take a picture but I also had a cucumber with my Luna bar as well)
I also had dessert today! I had a little bowl of fresh blueberries and strawberries topped with light cool whip…one of my favourite desserts!..the other? Pudding with cool whip!

THE BEST Decadent Healthy Brownie For One

Hey everyone! Today I modified a favourite brownie recipe of mine to make a healthy version, the perfect portion size for one. The result? This brownie is the most rich, decadent, mouthwatering healthy dessert I think I’ve made to date. It may be because I have a deep passion for the perfect brownie or just the fact that this dessert is pure chocolate heaven. Whatever reason, you should immediately pick up the ingredients and make this asap so you can agree with me! No guilt, no working out to “burn off your dessert”. Just eat, savour and enjoy.

Serves 1

Ingredients:

  • 2 tbsp almond flour
  • 1 tbsp +1 tsp unsweetened cocoa powder
  • 1 tsp brown sugar
  • 1/8 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp egg whites
  • 1 tsp melted coconut oil (could sub olive oil or melted butter) *Could sub extra banana but the result will be less fudgey*
  • Scant 2 tbsp mashed banana(or 2 tbsp unsweetened apple sauce)
  • 1/4 tsp vanilla extract
  • 1 tsp splenda (or more for a sweeter brownie, just add slowly to taste)
  • 1 tsp mini chocolate chips(5g) (I used the enjoy life brand, 1 tsp is more than you think if you do not have a scale to measure 5g)

Directions:

Preheat an oven to 350*. Spray a small ramekin with olive oil. In a separate small bowl, stir together all dry ingredients then add in wet ingredients and stir with a fork until combined *(add splenda last to taste). Stir in half of the mini chocolate chips then sprinkle the rest on top. Pour the batter into the ramekin using a spatula to scrape the bowl clean. Place in the centre of the oven for 15-17min. Do not overbake! Feel free to under bake for a more fudgey brownie. (Use a tooth pick to check if the brownie is done). Now remove from oven and grab a fork, dig in and enjoy your little masterpiece!

Jumbo Chocolate Chip Cinnamon Protein Bars

Good morning all! Tomorrow we leave for my amazing cottage so I wanted to bake a healthy breakfast ahead of time…and what’s better than the combination of cinnamon, chocolate and  peanuts? Uh..Nothing! So what I did was take my original cinnamon swirl protein bars made with the amazing Trutein cinnabun protein powder, and just topped them with 30g (2 tbsp) of mini chocolate chips, baked them in a 9×9 inch pan and cut them into 9 huge squares…I may have also added a couple extra peanuts in the bars ;)….

Almond Butter, Blueberry Egg White Oats & Sushi!

Today I had some amazing oats, recipe idea curtsey of Nutritionist in the Kitch. I changed it up a bit by using almond butter and blueberries for topping but kept the base the same. This recipe is simple and delicious and you can easily customize it to your own tastes! It is also high protein and very filling! Perfect for an active day ahead!  The oats are so creamy and delicious, you would never know their are egg whites in there!

Serves 1:

Ingredients:

-3/4 cup water (add more or less based on the consistency you like)

-1/2 tsp cinnamon

-1/4 tsp salt

-1 tsp flax seed (optional)

-1/3 cup large flake oats(not quick cooking  or instant!)

-1/4 cup egg whites

-2-3 drops stevia sweetener (or another sweetener to taste)

-1/4 tsp vanilla extract

-1 tbsp almond butter

-1/4 cup frozen blueberries mixed with 1/2 tsp sweetener heated in a microwave until hot

-Additional cinnamon for topping

-2 tbsp Almond milk (again optional but recommended!)

Directions: In a small pot bring first four ingredients to a boil. Once boiling, stir in 1/3 cup of oats, cover and reduce to a simmer. Simmer for 5-7 minutes and stir occasionally until oats have soaked up a little more than half the water. Next pour in your egg whites and whisk quickly, cooking for 3-4 minutes until oats begin to thicken and mixture becomes creamy. Take off the heat, stir in sweetener/vanilla and top with your almond butter and blueberries, add a drizzle of almond milk and a sprinkle of cinnamon. Enjoy!

Nutrition: 294 calories, 17g protein, 12g fat, 36g carbs, 8g fibre

Giant Cookies, Cheesecake and The Best Fajitas

Ah, the title says it all. It was a good day for food!  I babysat this a little boy all day and he helped me bake and decorate this giant cookie chocolate chip cookie! I am surprised at how good it turned out! We called it our cookie pizza and cut it into slices. I am pretty sure he ate half by myself.

Later I went out with friends to a festival and had this delicious chicken fajita on naan bread. I have never had naan bread before, can you believe it? I absolutely loved it! I just wanted to eat the bread alone haha but the sign said “The Best Fajitas” and I have to agree they were pretty awesome!

Later  I had the last slice of my decadent healthy Lemon Raspberry Cheesecake with a heaping tablespoon of natural peanut butter. The perfect way to end an awesome day.
