Honestly I am not sure why I didn’t post this recipe sooner! I eat this almost weekly and it’s one of my favourite simple meals! It’s so filling and delicious, I don’t feel like I am missing out at all when I eat this awesome dinner. It’s better than TACOS. I’d never thought I would say that but yes I prefer this salad to regular tacos! It’s also high protein and lower in carbs. If you love mexican food and tacos as much as I do then you are sure to love this dish… Take me to the recipe!

1 cup greek yogurt with 1/4 cup quick oats, 2-3 drops stevia sweetener, 1/2 tsp vanilla extract, 7-12 almonds crushed, chopped pineapple and strawberries. Mix! (I like to let the oats sit in the fridge with the greek yogurt for a little before adding the toppings).

1 cup romaine lettuce, 1/4 of a large tomato chopped, 1/4 of a large avocado chopped, 4oz lean ground beef with taco seasoning, 1/2 an elzekiel wrap (heated in the microwave), a few chili pepper flakes, cayenne pepper, 1 chopped green onion, 2 tbsp fresh salsa, 2tbsp greek yogurt. Optional sprinkle of cheddar cheese. Mix! (Serve with the meat hot!).

Simple 1/2 cup plain shredded chicken breast with a little salt/pepper(I use canned for this because it flakes nicely and is moist). 1/2 cup peas, 1/2 cup cooked brown rice and 1/2-1 tbsp reduced sodium soya sauce, chopped green onion and a little pepper to taste. Serve hot.

Hi guys, so I just wanted to share with you a quick recipe that I made for dinner tonight! It was super easy to prepare and it tastes so0 good! It is very filling thanks to the elzekiel wrap I used to make it. I hope you all try it out and like it as much as I do!

 

Ingredients:

-1 4:9 elzekiel large wrap (could sub a whole wheat wrap)

-1 heaping tablespoon of  sweet potato hummus(or another hummus)*

-1/2 tbsp spicy hummus *** Could substitute one hummus for all of the recipe or use your own combination, this is just what I like!***

-3 slices of red pepper chopped finely

-1/4 of a tomato chopped

-1/4 cup shredded chicken breast (I used canned as it’s quick easy and very moist)

-1 leaf of romaine lettuce chopped

-1/4 of an avocado chopped

-1/4 tsp chili pepper flakes

-1/8 tsp pepper to taste

-1 tbsp 0% plain greek yogurt

optional for extra spice: 1 dash of cayenne pepper

 

Directions: Spread the sweet potato hummus down the center of the wrap. Sprinkle with chopped red pepper, tomato and lettuce. Meanwhile with a fork, mix together your chicken and 1/2 tbsp spicy hummus. Then place the chicken mixture on top of the other ingredients in the wrap.(*Make sure to leave a gap at the bottom of the wrap for folding*). Now sprinkle with chili pepper flakes and pepper. Lastly, spread one side of your wrap with a layer of greek yogurt. (* I do it on the right because I fold the left side then the right and the greek yogurt helps the wrap stick together on it’s own!). Now Fold up the bottom of your wrap, then the sides and you are ready to dig in! Enjoy!

Clean Eating, Meals for today…

Another late night! Lots of homework today 😦 but I still wanted to get a post in. Today my breakfast, lunch and afternoon snack were similar to yesterday’s so I didn’t get any photos but I did take a picture of my amazing dinner..One of my favourite meals! Burritos! I used a super yummy elzekiel wrap with extra lean ground beef(with taco seasoning), avocado, tomatoes, romaine lettuce, 0% plain greek yogurt and lime juice, green onion, cayenne pepper and red pepper flakes for topping! (I like things spicy!). It was so, so good!

For a pre-workout snack I had another fruit bowl with almonds.

And..for my post-workout snack…the usual cottage cheese and natural peanut butter on the side haha. I always talk about this but I never post a picture so I figured why not. It’s not exciting but as you can tell I eat quite a bit after my workout!
