Giant Cookies, Cheesecake and The Best Fajitas

Ah, the title says it all. It was a good day for food!  I babysat this a little boy all day and he helped me bake and decorate this giant cookie chocolate chip cookie! I am surprised at how good it turned out! We called it our cookie pizza and cut it into slices. I am pretty sure he ate half by myself.

Later I went out with friends to a festival and had this delicious chicken fajita on naan bread. I have never had naan bread before, can you believe it? I absolutely loved it! I just wanted to eat the bread alone haha but the sign said “The Best Fajitas” and I have to agree they were pretty awesome!

Later  I had the last slice of my decadent healthy Lemon Raspberry Cheesecake with a heaping tablespoon of natural peanut butter. The perfect way to end an awesome day.

Just a few examples to give you an idea of what I eat and to help you if your stuck!

1 cup greek yogurt with 1/4 cup quick oats, 2-3 drops stevia sweetener, 1/2 tsp vanilla extract, 7-12 almonds crushed, chopped pineapple and strawberries. Mix! (I like to let the oats sit in the fridge with the greek yogurt for a little before adding the toppings).

1 cup romaine lettuce, 1/4 of a large tomato chopped, 1/4 of a large avocado chopped, 4oz lean ground beef with taco seasoning, 1/2 an elzekiel wrap (heated in the microwave), a few chili pepper flakes, cayenne pepper, 1 chopped green onion, 2 tbsp fresh salsa, 2tbsp greek yogurt. Optional sprinkle of cheddar cheese. Mix! (Serve with the meat hot!).

Simple 1/2 cup plain shredded chicken breast with a little salt/pepper(I use canned for this because it flakes nicely and is moist). 1/2 cup peas, 1/2 cup cooked brown rice and 1/2-1 tbsp reduced sodium soya sauce, chopped green onion and a little pepper to taste. Serve hot.

I just thought that I would sum up all my specific dinners/lunches/snacks in separate posts since I have had so little time to write and so many meals I’ve eaten haha. So to start off, this was a super tasty dinner of chicken, onions & red and orange peppers cooked with fajita seasoning and topped with tomatoes, romaine lettuce, avocado, a sprinkle of cheese and a little sour cream & salsa..yum!

Shrimp Salad This Dinner was a throw together kind of one because I had to babysit so I packaged up a simple shrimp salad with walnuts, goat cheese and a homemade light mayo based dressing!

Butternut Squash Soup
Another dinner I ate when I had more time was this delicious butternut squash soup and a side of chicken…I will post the recipe soon! 🙂
