Strawberry Mango LEO Smoothie!

Goodmorning! Ready for a delish natural vitamin/fibre/protein packed smoothie to start your day?? I totally made up the name for this by using LEO as a cute short form. The actual full name would have been Stawberry Mango Lettuce, Egg white & Oatmeal smoothie so I thought I’d make it easier on you all and shorten it like we do with BLT. haha. 🙂 So I know to some this combination of flavours sounds weird and not to appealing but if you’ve never tried a smoothie with these ingredients before, then your in for a surprise! The oat flavour pairs really well with the fruit and the romaine blends so you hardly know it’s there, covered by the sweet taste of strawberry and mango. Plus egg whites are a great source of protein without adding any flavour. Overall I loved the tangy/sweet taste of this shake! I will be making it again! Let me know if you try it :).

 

Serves 1-2 (This makes a lot! so you could probably turn it into 2 servings if you’d like!)

Ingredients:fr_2444_size880

-1/2 cup liquid egg whites

-1 cup frozen strawberries(140g)

-3/4 cup frozen mango(140g)

-7-8 leaves of romaine lettuce(100g)

-2 tbsp large flake or rolled oats

-1 tbsp flax seed

-1/4 tsp vanilla extract

-1/2 cup water (more or less depending on how thick you like your smoothie)

-1/8 tsp xanthan gum (optional but recommended for a thicker smoothie!)

-Optional: pinch of sweetener of choice(I didn’t add any but you can if you like your smoothies sweeter!)

Directions: Combine all ingredients in a blender until very smooth! Serve in a bowl and eat with a spoon or a cup with a straw, whichever way it will be delicious! Enjoy!

Breakfast & Dinner Today

Today I had a colourful breakfast and dinner which were just as beautiful to look at as they were delicious to eat!

Breakfast..I had my usual plain greek yogurt mixed with 2 drops of stevia and a little vanilla extract topped with fresh local berries, crushed almonds, and a dash of extra granular sweetener. Served with a drizzle of low-sugar syrup. (Plus, of course, a side of my favourite chocolate chai tea).

After spending all day in the pool it was nice to have this amazing dinner waiting for us!- with 3 different salads, Mediterranean pasta salad, greek potato & quinoa with toasted sunflower seeds, spinach, tomato etc. with a homemade dressing. I also had the best barbecue chicken made with our favourite KC Masterpiece sauce topped with light miracle whip and a slice of tomato. Oh and delicious hot bean salad as well! This meal was all my Mom’s doing, did I ever mention she’s an even better cook then me?

Hey all! I thought it was about time I posted a new recipe! I can’t even remember the last time I shared one with you guys! But this recipe was worth the wait..This easily just became my new favourite go-to snack. This is absolutely delicious and is wayyy better for you then any regular ice cream! It can actually be eaten as a meal replacement (highly recommend it for breakfast!). It’s perfect for the warm weather coming up. It even looks like spring haha :). So now to the details I know you all want to know.. This little treat packs a good 284 calories, 5g fibre, only 3g fat, 21g yes 21g protein!(no protein powder!), & 41g carbs. You are also getting lots of healthy vitamins & nutrients from the fruit! So now how does that crazy high protein number come in when there is no protein powder you may ask? WELL, I guess you will just have to read more to find out….. Take me to the recipe!

Healthy Snacks & Breakfasts

Hey! Been gone for awhile yet again..school is keeping me busy but I am still trying to post lots of the weekends so these are just some pictures to catch you up on some of what I’ve been eating during the week. I am pretty boring for meals during school because it’s hard to find time to make really creative recipes, so most of these foods are simple and clean 🙂

For breakfast one day I made baked banana oatmeal with mini enjoy life chocolate chips and walnuts..yummy! Ignore the messy pan. I so brilliantly forgot to grease it or spray it with pam so it was just a joy to clean out afterwards! But still completely worth the mess.

Strawberry Shortcake

Also during the week I made a funny looking microwave protein “strawberry shortcake” from a recipe I altered a bit. It was pretty tasty! I love my strawberry-rhubarb jam in just about anything though so that could be why it tasted so good. I could eat that stuff on cardboard and still enjoy it!

I also had a few really great snacks, I eat these pretty often because of convenience but they are actually so good. Sometimes simple really is best.

In the first photos/ first snack I had chipotle spicy hummus (from costco) with lots of carrots and cauliflower. I really recommend you try this hummus if you like spicy like I do! I have been through 3 hummus’ now trying to find one that was actually spicy enough for my liking and finally I think I found one! But I still threw in a few extra chili pepper flakes just cuz. 😉 I usually eat this with a side of red velvet cake tea from David’s tea and one of “The Best Homemade Protein Bars Ever”.

Fruit Bowl

Another snack I loveeeee to eat either right when I wake up or immediately following a workout is a bowl of fresh fruit. Thankfully I have an awesome Mom who makes a giant fruit bowl of mixed fruits every week so all I have to do is grab some!

Bedtime Post-Workout Snack

Bedtime snacks for me are usually high protein/high fat, low carb. But on this particular night I ran out of my awesome 2% cottage cheese (yes I LOVE plain cottage cheese, I know I’m weird.) and natural peanut butter which I usually just eat 1-2 tbsp of straight from the container haha. So instead since I did a really late workout I had some carbs/protein which included 3/4 cup 0% plain greek yogurt with mixed berries, a dash of stevia/vanilla extract/cinnamon & some low-sugar syrup.

Ham english muffin

Another breakfast I randomly decided to take a picture of is actually one of my favourites even though it looks extremely boring. I just hadn’t gotten around to putting the jam on yet because it was early and I wasn’t really thinking about my photography skills, I just wanted to eat, haha. But it’s basically just a whole-wheat muffin with sugar-free natural strawberry/rhubarb jam and 2 pieces of Canadian Bacon. This breakfast contains 18g of protein so it’s really great! But even better is when I make a sunny-side up egg, 1 piece of bacon and the english muffin, half for dipping in the egg and half for spreading with jam..perfection!

 

Protein Edge Bar-Lite, Wildberry Yogurt Review

I don’t normally do reviews but this bar was totally worth it! I first tried the chocolate protein edge bar before trying this one since I bought a bunch at once. I actually really didn’t care for the chocolate, it had that gross protein powder aftertaste. So I was pretty hesitant when trying this bar. But when I did I was so surprised! It tasted delicious! No gross taste at all. To compare the taste, it reminds me of the quaker strawberry yogurt bar that I used to eat. The best part is that it has little pieces of dried fruit. I admit that the ingredients are not greatest since it does contain corn syrup but these are still a good post-workout snack to satisfy your sweet tooth instead of eating a chocolate bar. Plus you are getting fibre and protein! More positives are that they contain 20 vitamins and minerals and are gluten free. I highly recommend them :). I am going to try the caramel crunch one next and hopefully review it too!

Breakfast and Post-Workout Snack!

Breakfast ToastToday I ate toast for breakfast! ahhh I know what am I doing? But I am trying to gain weight and eating paleo I still manage to lose weight lol so I figure eating some healthy carbs like 1 small piece of rye bread in the morning and maybe a little quinoa with my fish at dinner isn’t going to kill me. Like I always say, you need to make your way of eating your own. You are never going to follow someone else’s plan to a T. Anyways, this toast was absolutely delicious with sugar-free handmade rhubarb-strawberry jam and natural peanut butter. I also ate 2 eggs and some carrots, snap peas and blackberries.

For lunch today I just had a large salad with avocado, feta cheese, 1/2 a tin of tuna, a little ham and about a tbsp of chopped pecans.

Before my workout I ate a very light snack of a few carrot sticks and a little hummus with 1 small piece of black forest ham.

After my workout I ate my large snack of greek yogurt(3/4 cup) mixed with a little stevia, vanilla and coconut extract topped with 1 cup of mixed fresh fruit(pineapple, mango, watermelon, grapes, kiwi, strawberry, melon) and about a tsp of honey.

I may be eating a late dinner as I am super full from my snack still and I ate a little later then I’d like to!

I made a quick breakfast that actually ended up being really bright and colorful so I thought I’d share. Also as you can see I am trying to drink a lot more water.
