I’m Back! Creamy Maple Pumpkin Pie Oats

Hey guys!! ahh, it’s been too long! I’m so sorry I’ve neglected my poor website. I have been super busy with school and working on my own fitness.  Anyways…because it’s beautiful fall now, I thought I’d celebrate my return with an awesome recipe inspired by the season! These oats are superrr creamy and rich & very filling! I ate double this serving size and was extremely full so I lowered it down to half the serving size which is still a lot! But they are so tasty,  you will have no problem finishing the bowl!

Creamy Maple Pumpkin Pie Oats

Serves 1

Here’s the recipe:

-1/3 cup instant oatmealfr_3133_size880

-dash of salt

-2/3 cup unsweetened vanilla almond milk

-1/4 cup canned pumpkin

-1/4 tsp vanilla extract

-1/2 tsp cinnamon (or to taste)

-pinch of ginger, nutmeg & allspice

-2 tsp Truvia (or more to taste)

-1/4 ounce of pecans (about 1.5-2 tbsp)

-1/5 tbsp PB & Co Mighty Maple Butter * (or sub, 1/2 tsp natural PB + 1/4 tsp maple extract or 2 tsp sugar-free or natural maple syrup )

Directions: Combine almond milk oats and salt in a medium sized microwavable bowl and microwave for 1:40-2:00min or until oats have reached your desired consistency(you want them a little runny since you will be adding pumpkin and PB). Next stir your pumpkin into the cooked oats, add your spices & sweetener, top with maple butter and pecans! Stir just before digging in. Enjoy your beautiful fall breakfast!

**Tip** These oats would also be great topped with apple slices or raisins & paired with a side of scrambled egg whites**

Nutrition Facts per serving: 200 calories, 11g fat, 20g carbs, 4g fibre, 6g protein

Strawberry Mango LEO Smoothie!

Goodmorning! Ready for a delish natural vitamin/fibre/protein packed smoothie to start your day?? I totally made up the name for this by using LEO as a cute short form. The actual full name would have been Stawberry Mango Lettuce, Egg white & Oatmeal smoothie so I thought I’d make it easier on you all and shorten it like we do with BLT. haha. 🙂 So I know to some this combination of flavours sounds weird and not to appealing but if you’ve never tried a smoothie with these ingredients before, then your in for a surprise! The oat flavour pairs really well with the fruit and the romaine blends so you hardly know it’s there, covered by the sweet taste of strawberry and mango. Plus egg whites are a great source of protein without adding any flavour. Overall I loved the tangy/sweet taste of this shake! I will be making it again! Let me know if you try it :).

 

Serves 1-2 (This makes a lot! so you could probably turn it into 2 servings if you’d like!)

-1/2 cup liquid egg whites

-1 cup frozen strawberries(140g)

-3/4 cup frozen mango(140g)

-7-8 leaves of romaine lettuce(100g)

-2 tbsp large flake or rolled oats

-1 tbsp flax seed

-1/4 tsp vanilla extract

-1/2 cup water (more or less depending on how thick you like your smoothie)

-1/8 tsp xanthan gum (optional but recommended for a thicker smoothie!)

-Optional: pinch of sweetener of choice(I didn’t add any but you can if you like your smoothies sweeter!)

Directions: Combine all ingredients in a blender until very smooth! Serve in a bowl and eat with a spoon or a cup with a straw, whichever way it will be delicious! Enjoy!

Chocolate Cinnamon Raisin Sweet Potato Oatmeal

Goodmorning everyone! 🙂 I hope you are having a wonderful Wednesday! To help make your day a little sweeter, here’s a quick recipe you can whip up for a late brunch or for a sweet treat! The sweet potato goes so well with the warm oatmeal and cinnamon flavour. Topped off with homemade Sugar Free Chocolate Sauce & Cinnamon Swirl Butter, this dish will make any cinnamon lover more than happy!

Ingredients:

-1 packet instant oatmeal (28g)

-1/2 a medium raw sweet potato, peeled

-2/3 cup unsweetened vanilla almond milk

-1/4 tsp vanilla extract

-dash of salt

-1/2-1 tsp truvia sweetener

-1 tsp-2 tsp cinnamon depending on how much you like!

-1/2 tbsp cinnamon raisin swirl butter(PB & Co Brand)(If you don’t have this, you could try making your own jar by mixing some peanut butter with a little bit of honey/sweetener, cinnamon and a few chopped of raisins!)

-1/2 tbsp-1 tbsp homemade SF Chocolate Sauce

Directions: Place your sweet potato on a small plate atop a piece of paper towl. Poke holes in it a few times with a fork. Place fr_2337_size880in the microwave for 5min. Meanwhile, just before your sweet potato is finished cooking, prep your oatmeal by combining the dry oats with almond milk & a dash of salt. When your sweet potato has finished cooking, place your oatmeal in the microwave for about 1:30-2:00min or until cooked to your liking. Mash your sweet potato with a fork and spoon into your cooked oatmeal. Add in all your other ingredients and stir to combine. Top with additional cinnamon, truvia & a sprinkle of salt. Then plop on your Cinnamon Swirl Butter and Sugar Free Chocolate Sauce. Stir a little and dig in! Enjoy!

What I ate Today!

Hey guys, sorry I have been gone for a while but again it’s summer and it’s hard to keep up the blog when I’m on vacation! If you didn’t already see, I have posted multiple pictures of the delicious ice cream and other desserts I ate while at my cottage. They were all amazing and it was fine to eat them in moderation since I was getting more exercise at the cottage then I do normally at home. I kept up my workouts as well as biked & went for long walk/runs on the beach almost everyday. I love it there but now that I’m home I’ve bumped up the intensity of my workouts as well as the amount of food I am consuming. I’m ready to go all in again! Care to join me?

My current favourite breakfast..egg white oats(recipe in index) with warm blueberries, almond butter, crushed almonds, flax, cinnamon, vanilla, salt & a dash of almond milk.

A snack of Chocolate Chai Tea, red pepper, carrots, 2 kinds of spicy hummus along with additional chili pepper flakes(can never have too much spice!) & scrambled egg whites with dill & other spices. I ended up only eating half of the hummus!

Lunch was a banana with 3oz. of lemon dijon chicken. This is actually one of my favourite lunches though I typically eat an apple instead of a banana but my Dad stole the last one this morning…

I also tried this new s’mores Luna bar. I also just tried the chocolate nut brownie one as well but I definitely prefer this one! Reminds me a lot of a typical granola bar but much healthier and with 9g of protein, it keeps you feeling fuller longer!

For dinner I had this amazing lasagna my Mom makes on occasion, it’s made with cottage cheese(don’t be turned off by this..it’s what makes it awesome), low-fat mozzarella, parmesan & extra-lean ground beef. It’s honestly the best lasagna you will ever taste, haha not being biased or anything. I also ate these perfect cucumber slices as a side with my dinner. They were straight from my garden and tasted amazing! (I didn’t take a picture but I also had a cucumber with my Luna bar as well)
I also had dessert today! I had a little bowl of fresh blueberries and strawberries topped with light cool whip…one of my favourite desserts!..the other? Pudding with cool whip!

I got my workout in today, it only took me 30 minutes to complete. I worked back & abs, here is just an updated picture of my arm muscles. I plan on working on them more but they are okay for now!

Almond Butter, Blueberry Egg White Oats & Sushi!

Today I had some amazing oats, recipe idea curtsey of Nutritionist in the Kitch. I changed it up a bit by using almond butter and blueberries for topping but kept the base the same. This recipe is simple and delicious and you can easily customize it to your own tastes! It is also high protein and very filling! Perfect for an active day ahead!  The oats are so creamy and delicious, you would never know their are egg whites in there!

Serves 1:

Ingredients:

-3/4 cup water (add more or less based on the consistency you like)

-1/2 tsp cinnamon

-1/4 tsp salt

-1 tsp flax seed (optional)

-1/3 cup large flake oats(not quick cooking  or instant!)

-1/4 cup egg whites

-2-3 drops stevia sweetener (or another sweetener to taste)

-1/4 tsp vanilla extract

-1 tbsp almond butter

-1/4 cup frozen blueberries mixed with 1/2 tsp sweetener heated in a microwave until hot

-Additional cinnamon for topping

-2 tbsp Almond milk (again optional but recommended!)

Directions: In a small pot bring first four ingredients to a boil. Once boiling, stir in 1/3 cup of oats, cover and reduce to a simmer. Simmer for 5-7 minutes and stir occasionally until oats have soaked up a little more than half the water. Next pour in your egg whites and whisk quickly, cooking for 3-4 minutes until oats begin to thicken and mixture becomes creamy. Take off the heat, stir in sweetener/vanilla and top with your almond butter and blueberries, add a drizzle of almond milk and a sprinkle of cinnamon. Enjoy!

Nutrition: 294 calories, 17g protein, 12g fat, 36g carbs, 8g fibre

High Fibre Delicious Oatmeal!

Good morning! So guys, as you may know I know follow the IIFYM way of eating and it works amazing for me! But what you also should know is that fibre is an extremely important part of this diet! You cannot leave it out. So, if you are finding it hard to fit in your fibre for the day while still eating tasty food, here is a simple breakfast that packs 13-14g of fibre/ bowl! Each bowl only contains 234 calories! It also contains 8g of protein! It will keep you feeling full for long! It also is so great tasting that it won’t be a challenge to finish the whole bowl!

Serves 1:

Ingredients:

-1/4 cup dry quick oats

-2/3 cup unsweetened vanilla almond milk

-1/2 tbsp ground flax

-2 drops stevia sweetener(or another sweetener to taste)

-1/4 tsp vanilla extract

-1/2 tsp cinnamon or to taste! + more for topping(I estimate)

-14g or half a serving of bran buds cereal

-1 tbsp crushed pecans(53 calories worth, I measure using a scale!)

-3 tbsp blueberries

-2 medium strawberries chopped

-optional: raisins

Directions: Combine oats and almond milk in a bowl and microwave for 2:20mins, it should come out a bit runny but not to fear, this is what we want! Now stir in the flax, vanilla, cinnamon and stevia. Next pour in your bran buds and crushed pecans, stir until combined, top with fruit, additional cinnamon and a sprinkle of sweetener(optional). As you serve, the bran buds will have begun to soak up some of the liquid making the oatmeal thick and delicious! Perfection! If you want to really get fancy and add more fibre..add a few raisins on top!

Lunch: A delicious BBQ chicken salad w/kidney beans, herbed goat cheese, italian dressing & spices.

For dessert I made oatmeal raisin cookies! I managed not to eat the batter haha but I made sure to have one after they were baked! They were really, really good!

During this day I also had half a fig whole wheat bar from costco (really tasty!) and 3/4 cup greek yogurt with a little fruit on top as well as cottage cheese with one tbsp peanut butter before bed!

I scream, you scream, we all scream for ice cream! Okay soo, today I felt like a nice thick shake that I could eat with my new adorable spoon! It turned out more like ice cream then a shake and it was very filling and delicious! The recipe makes 2 servings or one HUGE glass! Okay I have literally nothing to say right now other than…this bowl was like drifting on a sweet cloud of sugary goodness..yet somehow it is healthy. The homemade caramel sauce is what makes this dish. I hope you love it like I did! P.S Proats=Protein Oats for those of you who don’t know :)… Take me to the recipe!

Cinnabun Proats!

Hey! Sorry for not posting sooner, I have been keeping busy with a new workout program and lots of homework haha 🙂 But thankfully it’s the weekend and that means sleeping in and new recipes! Wahoo. Anyways here’s a recipe to start off your weekend! I will also be posting a caramel banana nut oatmeal recipe that is out of this world very shortly so look out for that too!

Cinnabun Oatmeal

Ingredients:
1/3 scoop dry quick oats
11g or 1/3 scoop trutein cinnabun protein powder (or vanilla protein powder, but I highly recommend trutein!)
2/3 cup unsweetened vanilla almond milk + 1 tbsp water
1/2 a mashed ripe banana
1/4 tsp vanilla extract
optional: 1 drop stevia sweetener (or another sweetener to taste, I found I didn’t need it since my protein powder was already sweet enough with the banana).
1/2 tsp cinnamon
10-12 crushed almonds
20g raisins (around 1-2 tbsp)
Drizzle of sugar-free syrup or real maple syrup

Directions: Combine oats, almond milk and water in a bowl and microwave for 2 min(more or less depending on your microwave but you don’t want the oats too runny). Once cooked add your protein powder, cinnamon, vanilla, banana & half or all the raisins(I like to keep some to top it with!). Stir to combine and top with almonds/raisins/additional cinnamon and syrup. Enjoy!
