For dinner tonight I had my all time favourite fast meal. Vegetable Pea Soup! I actually love pea soup because it is very hardy and filling, it’s also loaded with good things like fibre and protein! I buy the “Habitat” brand and the new “vegetable pea soup” now has no artificial ingredients! The ingredients are very simple and short so I know I am eating whole food :). Now, another important part of soup is the crackers! Who wants to eat soup without crackers? The crackers just add that delicious thickness we all know and love. Well, no worries, my quick healthy substitution is one piece of light toasted rye bread! I spray it with a little butter spray and crumble/dip it in my soup and mix it up. As the bread softens, it creates the perfect thickness of soup! It makes it creamy and delicious. I highly recommend you try this as it adds volume to the soup. For dinner today I made another recipe from dashing dish (my favourite website for healthy recipes!) along with my homemade “Campbell’s Vegetable Soup”. It was such a filling delicious dinner. It had 30g of protein! I have never had chicken pot pie “muffins” before so these were really unique and a great new way to eat chicken! The only changes I made was with the spices since I had no poultry seasoning. Instead I used thyme, basil, parsley, a sprinkle of sage/majoram, salt, pepper & onion/garlic powder to make my own!

I absolutely love campbell’s vegetable soup. My favourite memory is coming in from a cold winter day at my grandparent’s farm and getting to eat a huge bowl of this soup along with the typical grilled cheese sandwich. But I stopped eating canned soups when I realized how easy it is to make soup at home! Of course though, I still missed my favourite Campbell’s vegetable soup. So.. of course, I went on a mission to replicate the flavours at home and I think I pretty much nailed it! If you love campbell’s soup, you will love this recipe. 🙂 Take me to the recipe!
I just thought that I would sum up all my specific dinners/lunches/snacks in separate posts since I have had so little time to write and so many meals I’ve eaten haha. So to start off, this was a super tasty dinner of chicken, onions & red and orange peppers cooked with fajita seasoning and topped with tomatoes, romaine lettuce, avocado, a sprinkle of cheese and a little sour cream & salsa..yum!
This Dinner was a throw together kind of one because I had to babysit so I packaged up a simple shrimp salad with walnuts, goat cheese and a homemade light mayo based dressing!
Another dinner I ate when I had more time was this delicious butternut squash soup and a side of chicken…I will post the recipe soon! 🙂
So lately we have had record temperatures here. Yesterday was a cold walk to school at -18 degrees celcius, not including the wind chill! So what better excuse is there to come home to a delicious hot soup and a cup of Paleo Peppermint White Hot Chocolate.
