Healthy Spicy Jambalaya!

If you’ve ever had good Jambalaya then you know how amazing it can be! I mean what is better than shrimp, sausage and chicken all in one bowl? Uh..nothing. These are 3 of my favourite things so when I went out for dinner the other night I knew what I was ordering! Plus I love everything spicy..so that was just the cherry on top of the cake. After devouring my delicious meal, I knew I had to try and re-create this awesome dish at home..because well, let’s just say the restaurant version could not exactly be considered “healthy”. So I went to work in the kitchen and created this little masterpiece! And although it took a little more work, it was totally worth it and turned out better than I had expected! I hope you enjoy this dinner for one as much as I did!

Ingredients:

-1/2 tbsp olive oil

-5 Jumbo shrimp, cooked, peeled, deveined and thawed

-1 cooked sweet italian turkey sausage or spicy italian turkey sausage sliced (I used the maple leaf sweet italian brand)

-1.5 ounces of barbecue or blacked chicken chopped into bite sized pieces (or you could sub regular plain chicken!)

-1/4 of a large green pepper sliced thinly

-1/4 of large onion sliced thinly

-1/8-1/4 tsp  garlic powder

-1/4-1/2 tsp paprika

-1/8 tsp thyme

-1 tsp fresh oregano(could sub 1/4-1/2 tsp dried)

-salt/pepper to taste

-1/4 tsp chili pepper flakes(or to taste)

-sprinkle of cayenne pepper(More or less based on how spicy you want it)

(All amount of spices can be changed to fit your own taste!)

-1/4 cup brown rice uncooked=1/3 cup cooked (cook as directed, I cooked it with just a dash of salt)

-1/4 cup prego pasta sauce or another tomato/marinara sauce

-Optional: Grated or dry parmesan cheese and additional oregano for topping.

Directions: Cook your rice. Heat a pan over medium-low heat. Add olive oil and rotate pan to coat it. Add your garlic powder. Once hot, toss in onions to cook for a minute or two, using a little water and a lid to help steam them.(make sure not to burn them!) Then add peppers, stir for a bit until cooked to your liking, then add meats and all other seasonings expect fresh oregano (if using dry then just add it now). Next add your rice and sauce. Stir it all a bit more to combine everything and warm the entire dish. Now add your oregano and pour your Jambalaya into a bowl. Top with optional (but recommended!) parmesan cheese, additional fresh oregano and  dig in. Enjoy!

Honestly I am not sure why I didn’t post this recipe sooner! I eat this almost weekly and it’s one of my favourite simple meals! It’s so filling and delicious, I don’t feel like I am missing out at all when I eat this awesome dinner. It’s better than TACOS. I’d never thought I would say that but yes I prefer this salad to regular tacos! It’s also high protein and lower in carbs. Oh my gosh guys, this one is a winner. I created this recipe today and I fell in love! This dish is spiced coconut shrimp kabobs over mango/avocado quinoa with a side of lime and homemade tzatziki sauce. Wow, Just like a restaurant menu item! I recently got back from vacation in Turks and Caicos where they are known for their seafood! I missed the delicious flavours I had there and so of course I had to try and re-create them at home. This recipe does just that. Grilled shrimp, coconut, avocado, mango..and more all come together to form the perfect dish to take you back to that vacation atmosphere. Hope you try it out! Healthy Spicy Chicken Hummus Wrap

Hi guys, so I just wanted to share with you a quick recipe that I made for dinner tonight! It was super easy to prepare and it tastes so0 good! It is very filling thanks to the elzekiel wrap I used to make it. I hope you all try it out and like it as much as I do!

 

Ingredients:

-1 4:9 elzekiel large wrap (could sub a whole wheat wrap)

-1 heaping tablespoon of  sweet potato hummus(or another hummus)*

-1/2 tbsp spicy hummus *** Could substitute one hummus for all of the recipe or use your own combination, this is just what I like!***

-3 slices of red pepper chopped finely

-1/4 of a tomato chopped

-1/4 cup shredded chicken breast (I used canned as it’s quick easy and very moist)

-1 leaf of romaine lettuce chopped

-1/4 of an avocado chopped

-1/4 tsp chili pepper flakes

-1/8 tsp pepper to taste

-1 tbsp 0% plain greek yogurt

optional for extra spice: 1 dash of cayenne pepper

 

Directions: Spread the sweet potato hummus down the center of the wrap. Sprinkle with chopped red pepper, tomato and lettuce. Meanwhile with a fork, mix together your chicken and 1/2 tbsp spicy hummus. Then place the chicken mixture on top of the other ingredients in the wrap.(*Make sure to leave a gap at the bottom of the wrap for folding*). Now sprinkle with chili pepper flakes and pepper. Lastly, spread one side of your wrap with a layer of greek yogurt. (* I do it on the right because I fold the left side then the right and the greek yogurt helps the wrap stick together on it’s own!). Now Fold up the bottom of your wrap, then the sides and you are ready to dig in! Enjoy!

Crispy Oven Baked Drumsticks with Buffalo Dipping Sauce

When I was younger my brother and I used to fight over the drumstick when we would have the chance to go out to KFC for dinner.(Yes I know it’s awful! But we went very rarely). It was always our favourite piece. I think many people prefer the leg because it’s just the perfect piece to pick-up and eat with your hands! And that’s the best part, no utensils required. So the other day I was trying to find new ways to eat chicken and discovered drumsticks at the grocery store(how could I forget about them??). I really love spicy food so I also picked up a new hot sauce since I am not a huge fan of “Franks” since I don’t find it hot enough. I ended up buying buffalo style woodland’s hot sauce. I tasted it and it’s super spicy! Perfect! But I know not everyone loves spicy so I added some ingredients to tone it down a bit and make it delicious for everyone. My lunch for today was again pretty simple, I like things I can prepare fast and just throw in what ever I feel like! This salad included 1/2 an avocado, 1/2 a hard boiled egg, romaine lettuce, handful of kidney beans and cooked corn, tomato, red onion, hot pepper chopped, chili powder, onion/garlic powder, paprika, cayenne salt & pepper and  a sprinkle of stevia for a bit of sweetness. I would have added lime juice if I had any on hand and I think it would have made it even better!

So lately we have had record temperatures here. Yesterday was a cold walk to school at -18 degrees celcius, not including the wind chill! So what better excuse is there to come home to a delicious hot soup and a cup of Paleo Peppermint White Hot Chocolate.
