High Protein/Fibre Chocolate Strawberry Banana Filled Crepes

Okay so the first time I tried crepes, I didn’t like them. Why? They served them plain with no sauce or fruit! That’s like serving PB & J without the PB & J!! So when I went to Mexico and saw the had a crepe booth, I was a bit skeptical of how they would taste. But oh my lord, these were amazing! They had a warm chocolatey filling served atop a sweet strawberry sauce with chopped bananas, strawberries & powdered sugar on top of the crepe itself. Word’s cannot describe how amazing these were. When I got back I forgot about my amazing crepes for awhile..that is until this morning when I had this crazy craving for crepes! Knowing I could not deny this craving, I created my own version of those memorable crepes. The result?? They are awesome! The filling is sweet and delicious, I could just eat it off a spoon! & The chocolate Sauce? OMG heaven. The crepe was done french toast style so it’s light cinnamon sugar flavour just adds to the awesomeness of this dish.

Ingredients:

-1 multigrain Flat Out Wrap (these are great, high fibre, high protein, low-fat)

-1/3 cup egg whites

-1/3 cup unsweetened vanilla almond milk

-1 tbsp homemade SF Chocolate Syrup.fr_2103_size880

-3/4 cup frozen strawberries(110g)

-1/3 a ripe banana mashed

-1 tsp sweetener of choice(I used splenda)

-1/4 tsp vanilla extract

-1/8 tsp salt

-1/4-1/2 tsp cinnamon(depending on how much you like!)

-1/2 tsp Truvia(or another sweetener to taste)

-Olive oil or Cooking Spray

Directions: Heat a large pan over medium-low heat. Spray generously with cooking oil(up the sides as well). In a large flat bowl, combine egg whites, almond milk, vanilla, salt, truvia and cinnamon with a fork. Meanwhile place the frozen strawberries in a small microwavable bowl and microwave on high for 2 minutes or until they are easy to mash. Stir in your banana and sweetener and sweeten to your liking. Microwave for another 20 seconds until hot. Now dredge your flatout wrap in the egg white mixture on both sides until well coated. You may have some extra batter that you can use up in my French Toast egg whites recipe! Now place the wrap in the hot pan and cook until browned on one side. Flip and cook for a bit on the other side. Now place half of your filling over one side of the wrap and fold. Cook for a few more minutes then take off the heat, top with extra strawberry-banana sauce and a dollop of chocolate sauce. Sprinkle some extra cinnamon and eat up! :). Enjoy!

Paleo Sunny Avocado-Egg Lettuce Wraps

Brighten up any cloudy morning with a beautiful breakfast of sunny-side up eggs over fresh avocado lettuce wraps. These little wraps will keep you full for hours with a large serving of healthy fats, fibre and protein. This recipe is also paleo and vegetarian friendly! This perfect breakfast can’t get any better…

Serves 1:

Ingredients:
-2 large romaine leaves
-2 thick slices of a large tomato chopped (1/2 a small tomato)
-1/2 a large avocado sliced thinly
-1-2 tbsp finely chopped red onion
-1 whole chopped green onion
-1 pinch of garlic powder/onion powder
-1 pinch of chili pepper flakes(optional for added spice)
-salt/pepper to taste
-2 large eggs + extra salt/pepper to taste

Directions: Place the 2 romaine leaves on a large plate and sprinkle tomato, avocado, red onion, green onion, garlic/onion powder and red chili pepper flakes on top. Meanwhile, preheat a frying pan over low-medium heat sprayed with a little olive oil cooking spray. Cook 2 eggs until just set(middle still runny) by cooking gently on each side for about 1-2minutes. (while cooking sprinkle well with salt and pepper).
Take off the hot eggs and top each romaine leaf with one each. Grab a fork and knife & break the yolks of each egg letting the beautiful yolk spill over your lettuce wraps! Enjoy!

I’ve always loved the fact that egg yolks create their own delicious sauce!

Healthy Spicy Chicken Hummus Wrap

Hi guys, so I just wanted to share with you a quick recipe that I made for dinner tonight! It was super easy to prepare and it tastes so0 good! It is very filling thanks to the elzekiel wrap I used to make it. I hope you all try it out and like it as much as I do!

 

Ingredients:

-1 4:9 elzekiel large wrap (could sub a whole wheat wrap)

-1 heaping tablespoon of  sweet potato hummus(or another hummus)*

-1/2 tbsp spicy hummus *** Could substitute one hummus for all of the recipe or use your own combination, this is just what I like!***

-3 slices of red pepper chopped finely

-1/4 of a tomato chopped

-1/4 cup shredded chicken breast (I used canned as it’s quick easy and very moist)

-1 leaf of romaine lettuce chopped

-1/4 of an avocado chopped

-1/4 tsp chili pepper flakes

-1/8 tsp pepper to taste

-1 tbsp 0% plain greek yogurt

optional for extra spice: 1 dash of cayenne pepper

 

Directions: Spread the sweet potato hummus down the center of the wrap. Sprinkle with chopped red pepper, tomato and lettuce. Meanwhile with a fork, mix together your chicken and 1/2 tbsp spicy hummus. Then place the chicken mixture on top of the other ingredients in the wrap.(*Make sure to leave a gap at the bottom of the wrap for folding*). Now sprinkle with chili pepper flakes and pepper. Lastly, spread one side of your wrap with a layer of greek yogurt. (* I do it on the right because I fold the left side then the right and the greek yogurt helps the wrap stick together on it’s own!). Now Fold up the bottom of your wrap, then the sides and you are ready to dig in! Enjoy!

Breakfast and Snack Today 100% Clean

Honey French Toast
Hey Guys! Today I had such a delicious breakfast! I made cinnamon french toast with a piece of whole wheat bread, 1 egg, almond milk and lots of cinnamon, a little vanilla, cooked it in a little coconut oil on each side then topped it with a drizzle of honey..delicious. I ate it with a side off seasoned egg whites (dill, onion/garlic powder, pepper).

For a snack I had these beautiful lettuce wraps with a few spoonfuls of  0% plain greek yogurt, one chopped apple, a drizzle of warm peanut butter and cinnamon to top it all off!

No artificial sweeteners and no additives! Hope you all are keeping up with your healthy eating as well, keep going! & Remember, eating clean does not mean food has to be boring!

Peanut Butter Apple Wrap

I really like recipes that are simple and take minutes to prepare but taste amazing. This is one of those recipes! I eat these apple wraps for breakfast and lunch and they keep you full for hours! They are high protein without eating a meat heavy meal. Try it out :).

Ingredients:
-1 large ezekiel 4:9 sprouted grain wrap (best wraps ever, if you haven’t tried them I highly recommend! it’s what makes this recipe great, they have a really awesome nutty flavour unlike any other wrap and are all natural with 6g protein and 5g fibre and only 19 net carbs!)
-1/2 an apple of choice(preferably a sweet type)
-1 tbsp natural peanut butter
-cinnamon to taste (I like a lot!)

Directions:
Spread peanut butter on the wrap then top with thin slices of apple and sprinkle with cinnamon. Fold the bottom up then the sides like a burrito and enjoy!
