Eats For Today

I was lazy and hungry this morning so breakfast was pretty simple! Plain Greek yogurt, (2 drops stevia sweetener, 1/4 tsp vanilla extract) topped with chopped strawberries, pineapple chunks, an extra pinch of sweetener and a few crushed almonds. Oh and since I was in the mood, some Chocolate Chai Tea. Sadly it was raining..so no sitting outside for breakfast today!

One of my snacks today was this protein bar I’d had sitting in the back of my cupboard for ages that I’d been meaning to try! It the macros are not perfect but they are still decent! It’s a smaller bar too which I liked. The taste wasn’t something I could quite put my finger on. It tasted pretty similar to any typical protein bar. The chocolate coating was nice and I liked the little pieces of chocolate inside. Overall I probably wouldn’t purchase again but it’s not bad!

For dinner I had one of my favourite things..it’s weird but I now love to eat my spaghetti sauce and meatballs over brown rice! Half a cup just cooked normally with a little salt. (Though I do add a little extra water to the rice and cook it slightly longer so it gets a bit more fluffy!).

My favourite toppings..Parmesan cheese and red chili pepper flakes, nothing ever has enough spice to me.

So..I’ve been having this big debate with my family, what do you prefer spaghetti and meatballs or spaghetti and meat sauce? For me, it’s definitely meatballs!

Dinner & Bedtime Snack

Zucchini Pasta

Tonight I had a great tasting dinner of Zucchini “Pasta”(Zucchini peeled into strands and cooked in a oil sprayed hot pan for about 1-2min with a little salt) and homemade spaghetti ground beef sauce. I think I prefer zucchini over spaghetti squash as a pasta substitute and it’s so much easier to prepare!

Bedtime Snack Eggs and Carrots
I didn’t have a huge dinner so I was pretty hungry later. I had 2 hard boiled eggs and some carrots with my favourite light spicy hummus for a snack!

What I’ve been eating…

Greek Salad Shrimp dinner Turkey Meatballs & Rice

Just a few of my meals lately.

The first is a super tasty chicken greek salad with crumbled feta cheese, black olives, 1/2 cup plain chicken(with salt and pepper of course!), assorted vegetables(tomato, lettuce, cucumber, red/green pepper, green onion, carrots etc.) Topped with greek feta olive oil dressing! (I have also eaten this with italian dressing and pecans and it is amazing!)

Another recipe I had been dying to try was redoing my lemon sweet sauce with shrimp and creating a shrimp stir-fry. It turned out really well! If you look at my past recipe I just decreased the amount of lemon a bit and added a few extra green onions/ginger/ and red pepper flakes. I also toasted the almonds a little more for a nicer flavour. Yum!

Dinner was some leftover spaghetti sauce & meatballs from another one of my recipes on top of half a cup of rice with a sprinkle of parmesan. I actually preferred the sauce after it sat in the freezer for a few days! It’s as if all the flavours combined together better than before and I loved it on top of rice vs. pasta. It just changes thing up a bit!
